In some japanese restaurants in NZ they serve a side salad of shredded lettuce/carrot/cabbage with a tangy ginger tasting dressing (usually with a bento box).
Any ideas on recipes for how to make / what goes in the the dressing!

Could it be Wafu dressing with ginger! Sorry, don't have a recipe, but Google will have some.
