anyone with good recipe to smoke fish

We just salt & brown sugar the fish then smoke. Yummy!

same as gemini. Make sure you get rid of all the scales, slather both sides of gutted fish with lots of salt and brown sugar and smoke for about 15/20 mins.
(edited to say not to slather the scaled side obviously! ! )

Ive just recently purchased a fish smoker myself, Have been told to leave the lid open a fraction otherwise the smoked taste is very strong and can , make the fish taste bitter...

Just don't put in too much sawdust.

I only salt and pepper mine (a decent amount too) brown sugar changes the flavor too much for me yuck sweet
