Pickled eggs, 'perfumy' taste of a spice

Hi, I made some pickled eggs and used:
cloves, chillie, onion, bay leaf, fennel seed, juniper berry, rock salt, black peppercorns, allspice (whole) and celery salt (forgot to ad mustard seeds), about 2/3 wine vinegar and 1/3 water. My husband thinks there is a perfume type of spice and I can't work out which one. Any ideas!
Also if someone has a favourite recipe for pickled eggs, can you please post it!

The juniper berries have a piney smell to them and seem to be the only thing that might be described as perfumey I think.
