Brown/White Sugar

Does it make a difference to taste or anything else if one uses white sugar instead of brown.

Yes it does make a difference.White sugar has no flavour other than sweetness, brown sugar has a distinctive caramel flavour.

They have different moisture levels as well so shouldn't be substituted for each other in cakes or other baking where moisture levels are important.

Brown sugar is slightly acid so is often used with baking soda as the raising agent.If you use white sugar instead the baking soda won't be neutralised, the cake won't rise and it will taste of soda.
