Fresh Chillies - red vs green

I want to make Garlic and Chilli Prawns. The recipe says red chillies but I can only find green ones in the supermarket. Is there a difference or can I use preserved red chillies!

Green are normally hotter. But then it depends on the variety.

There are so many variants with chili's. If you have green, use green, taste it, and go from there. Chili sauce, probably suits most people.

Preserved chillies are usually in vinegar or industrial acid, so may not be ideal for your dish.Dried chilli flakes might be better - that's what I use for Spanish garlic chilli prawns if I can't find fresh red ones.

For fresh chillies, as a rule the smaller the hotter, and the colour makes a difference to the flavour but not the heat.

I find red ones sweeter - much the same as red capsicum are sweeter than green. I would use red chilli flakes instead - still waiting for my chillis to grow big - we have red chillis in the supermarkets now but are $6 a packet and $9.99 a packet where I work!

Just use chilli flakes.
