I want to make muffins but I'm just starting out on this baking business!

Billyjessie, there are many pages of threads on the subject of muffins in here and some really great recipes. If you use the search box on the left of your screen and choose Last Year as the date option you will find an overwhelming selection to choose from.

chelsea.co.nz has got lots of muffin recipes.remmeber the key to muffins, is mix until just combined.dont overmix them

Regarding overmixing. It does not matter if you can still see bits of dry flour through themix it cooks just fine. I use my biggest spoon to mix it and would probably only use about 6 or 7 strokes turning the bowl a little each time. Hope you can understand this.
