Meringue Christmas Cake

This sounds yummy so thought I would post it on here. I have not made it yet.

120g dry roasted almonds
80g pistachios
120g roasted hazelnuts
260g mixed fruit
250g g dates finely chopped
200g dark cooking chocolate, chopped
1tsp mixed spice
5 egg white at room temp
pinch of salt
1/2 cup castor sugar.

Oven 160c

Place almonds, nuts, mixted fruit, dates, chocolate, and mixed spice in a food processor and process for 30 secs till roughly chopped. Beat egg whites and salt till firm peaks. Gradually beat in sugar few tbs at a time. Fold in fruit and nut mixture. Spoon into a greased and lined 23cm springform tin. Bake for 30 mins. Allow cake to cool in the oven with door ajar.

Sounds interesting.I wonder how log it would keep!

Would make nice small cakes for pressies at Xmas.

It says you can keep it up to 5 days refrigerated. Sounds like a yummy dersert to have christmas day.
