I got this recipe in email yesterday. . thought I'd give them a go today after running the recipe past my kids and getting a resounding 'yes please! '

made it and it's cooled down now. .

recommended recipe... the base is really buttery and rich, I swapped cape gooseberry jam for the strawberry ( it was what was in the fridge) and I also made it in a square caketin lined with cooking paper rather than fiddle about with rolling the base and cutting into circles for the muffin tray.

Looks nice and holds together well when cut.

have printed the recipe out and stuck it on the inside door of the pantry with other easy faves.

Sorry to bump but did a search on this recipe! Did you find the base to be a bit dry when mixing/rolling? I am new to baking so please can someone tell me how do I avoid this?
P. S ... they are still very YUMMY though, they are a hit in this house;o)
