Duck eggs

anyone have recipies for duck eggs. i hear they shouldn't be eaten unless cooked in cakes etc. i make a nice chocolate cake which is delicious

I used to make soft boiled eggs with them as the yolk is so much bigger. And raw mayo too. These were my ducks eggs though. Wouldn't do raw duck egg mayo with eggs I wouldn't have collected myself from a DRY spot that very morning.

.we have ducks.and chookens.for ages i had only used the duck eggs for baking as they are amazing.they can hold the volume, when beaten, really well.now we only eat duck eggs.for everything!.the whites cook a little quicker than a chicken egg and can go a bit rubbery if way over cooked.we use them for runny fried eggs, mayo, bacon & egg pies, quiche.anything!.dependi-
ng on the size of the egg, 3 duck eggs equals about 4 chicken eggs.(i use to be a pastry chef so most of my recipes are in weights so i weigh the eggs)
