Jo Seagers recipe with smoked fish and boiled eggs. Had the recipe book but loaned it out and that is the one recipe I really miss.

Topping
1kg pots suitable for mashing, generous knob butter or marg. 1/2 cup sour creme or creme friache. S & P.
Filling
1 sm onion peeled and finely chopped.500ml milk.1x500gcan smoked fish fillets in brine.250g smoked salmon trimmings. 2 cups white boneless fish fillets chopped. 1 cup prawns or shrimps. 1/2 cup gherkins chopped. 3 hard boiled eggs, cut into wedges.3 tblsps chopped parsley. grated rind and juice 1 lemon. 1 cup thawed baby peas. 50g butter. 3 tblsps flour.50 ml cream or milk. freshly gound black pepper. 1/2 cup tasty cheese
Method
Peel the pots and cook until tender, approx 20 min. Put thru pot ricer or mash til fluffy and lump free. Beat in butter, sour creme and season s&p.
Place onion and milk in a small saucepan and bring to boil, then cool, allowing onion to infuse into milk. Strain when cool and discard the onion.
Place all the fish, prawns in a bowl, draining but reserving the liquid from canned smoked fish. Add gherkins, egg,parsley, lemonjuice, rind and peas.
Melt the butter over a low heat and add flour whisking to combine. Cook for about 1 min then whisk in the milk and reserved fish liquid, a little bit at a time. Keep stirring as it thickens. Add the creme and pepper. No need for extra salt as smoked fish is quite salty. Pour sauce over fish, gently stirring through to combine, being careful not to over-mix and break up chunks fish.
Spray six small noodle bowls or ramekins with non stick spray. Divide the mix between them, then spread mashed pot over and sprinkle w cheese. Bake 35-40 min until piping hot and golden on top.
