Mussel Fritter recipe please.

Need a nice simple / tasty recipe.Good enough that people will buy a second one.

This is yummy: chopped cooked mussels - 2 eggs - 1 1/2 c self raising flour - put seafood soup mix - chopped parsley - 1 tsp lemon rind - mussel liquid. Mix dry ingreds together. Add beaten yolks and mussel liquid, beat till smooth Add chopped mussels, parsley and rind. Add stiffly beaten egg whites. Thin with more mussel liquid if needed.

Mussel Fritters
The basil is the secret ingredient ~ don't leave it out.
Ingredients:
12 mussels2 eggs2 tbsp flour1 tsp baking powder2 tbsp chopped parsley2 tbsp chopped FRESH basil 1/2 tsp saltfreshly ground black pepperbutter for frying
Method:
Lightly steam mussels over boiling water until they open. Take from shells, clean up removing beards.and chop mussels roughly. (Not too fine) .into bowl in place in fridge to cool.
Chopped the parsley and basil and add to the mussels.
In a bowl, beat the eggs; sift in four and baking powder. Beat with fork to combine.
Stir in the mussels, salt, ground pepper, basil and parsley.Melt butter over medium heat. (Too high and the butter will burn)
Drop mixture by tablespoonfuls into the butter and fry - pancake style for 1-2 minutes per side until golden brown.
