You have to carve it after it cooks, not before.

Why stop it I have always seen that as an indication that everything is going well soft tender meat and hard crisp crackle that lifts a bit round the edges, though I guess you could make more cuts in the skin before cooking so the crackling is able to move with the meat as it pulls in then shrinks as it cooks.

yep, I hate it too, has to be picked up by hand, to mouth. mmmmmm no sooner that you deal with that bit, there is anotherbit to deal to.
