My cousin used to fill the wife's freezer with wild duck. If you haven't tasted it before, its pretty lean, tough and gamy. Here is what she would do with it.
Roast a chicken and the duck together in the oven. Cool and shred the meat from the bones.
Sauce In a saucepan, melt 2ozs butter, stir in flour (enough to leave the side of the pan), add 2 cups of milk or chicken stock slowly, stirring all the time (no lumps) until it thickens. Add to sauce: 1 chopped onion and 250 grams of mushrooms, 2 slices of bacon previously cooked together in a frypan with a little butter.
Combine the meat and sauce, put in a casserole dish and top with breadcrumbs, seasoned with 1 egg yolk, melted butter and herbs (any combination of herbs or just one that you like).
Bake 180 until heated through well and the top browned.
