have half a bag left - rest was used in a cake - but dont want to make the traditional milk pudding with it

Vinnies’ Semolina Pudding

2 1/4c milk
pinch salt
1c semolina
100g sugar
1 tab butter
1 tab dark rum
zest 1 orange
2 eggs, beaten
blackcurrants or other strong tasting berries

Heat milk and salt, stir in semolina and stir over heat until thick.Off heat add sugar, butter, rum, zest and eggs.

In ramekins or gratin dish place a layer of berries on bottom, pour in semolina and bake in a bain marie 150C 35 – 40 min until set.

Serve with star anise custard:

1 ¼ c milk
1 ¼ c cream
4 egg yolks
4 star anise crushed
½ c sugar.

Make custard and strain.

Semolina Halva with Raisins

4 tab ghee
90g golden raisins
75g cashew nuts, chopped
155g fine semolina
6 green cardamom pods
680 ml water
185g sugar
½ tsp saffron threads, crushed

In a large shallow pan over medium heat combine 2 tab ghee, raisins and cashews.Stir over heat until the cashews are golden, transfer to a plate.

Add the remaining ghee and the semolina to the pan, stir 4 min until golden brown.Transfer to another plate.

Take seeds out of cardamom and crush to a powder.

Wipe pan clean, add water and sugar, bring to the boil, stirring to dissolve sugar.Boil without stirring 5 minutes until syrupy.Add saffron.

Reduce heat to low, add semolina and stir 7 - 8 minutes until thick.Add cardamom and fried nuts and raisins, combine well and leave to cool.

When cool enough to handle pack into small moulds, mini-muffin tins etc.When completely cold unmould.

Will keep in fridge 5 days.

Tangelo & Yoghurt Cake

Syrup:

165g sugar
1 c. water
julienned zest 4 tangelos

Simmer 30 min, add juice 4 tangelos just before using and reheat to a simmer.

Cake

½ c plain flour
1 ½ tsp baking powder
200g semolina
165g caster sugar
3 eggs
200ml thick plain yoghurt (Greek style is best)
2/3 clight olive oil
rind and juice 1 tangelo

Heat oven to 190 degrees C.
Grease 20cm cake tin

Mix dry ingredients in large bowl.Beat wet ingredients together well and stir into dry ingredients.Pour into tin, bake 40 – 50 min. until firm and shrunk slightly from sides.Turn out on to plate with raised lip, pierce in several places with fine skewer. Pour hot syrup over, distributing zest evenly over top of cake.

Keeps several days.

Potato Semolina Balls (deep fried)

¾ c semolina
3 large potatoes, cooked & mashed
1 sm onion, grated
2 tab mint or parsley
1 tab coriander leaves
1 tsp cumin
1 ½ tsp salt

Dry fry semolina until golden.Mix with everything else, form into walnut sized balls and flatten slightly.

Deep fry at med. temp.Serve hot with chutney.

Mint, Coriander & Coconut Chutney

½ c mint
½ c coriander
4 tab desiccated coconut
2 tab lemon juice
½ tsp salt
1 chilli
2 cloves garlic
yoghurt

Finely chop everything, mix with yoghurt to a sloppy paste.Keep chilled.

Rava Dosa (Semolina Crepes)

125g fine semolina
60g rice flour
45g plain flour
500 ml water
1 tab oil (plus more for frying)
2 capsicums, ideally different colours, finey chopped
4 shallots, finely chopped
3 hot green chillies, thinly sliced
1 tab coriander leaves, chopped
1 tsp cumin seeds, crushed
½ tsp red pepper flakes
1 ½ tsp salt

Combine flours and water in large bowl, whisk well, cover and set aside 60 min to thicken.

In a fry pan heat 1 tab oil and fry capsicums, shallots, chillies, coriander, cumin and red pepper, stirring, 5 minutes until partly tender.Pour contents of pan into batter and mix, add salt and mix well.

Oil frying pan lightly and cook small pancakes over med-high heat.

Keep warm until all cooked.

When I was a child my mum always made me a semolina pudding and at the end whipped up 1 or a couple of eggs! and stirred the fluffy egg mixture through. I just loved it but she cannot remember how she made it. I bought semolina and have not yet worked out what to do with it. I must experiment this weekend.
