BEETROOT - HOW DO YOU ROAST

anybody got any clues on how this is done, got some from the garden and would like to try them roasted. Thanks

Depending on how big they are I just roast mine like potatoes but I don't par boil them. Baby ones (no more than 5cm diameter) I leave whole, any bigger than that I would cut into maybe quarters

I cut the stalks off but dont peel them or they bleed, drizzle with oil, salt and pepper and bake until tender, the skin comes off easy when cooked, and then I just cut to desired size. I dont like tinned beetroot but this is good!

ooohhh... and if you have some balsamic vinegar... drizzle just a little over before serving... . this is yummy.
