Apricot Coconut slice

Found this on the back of S.P.C tinned apricots and its really nice
1/2 cup plain flour, 1/2 cup selfraising flour, 1/2 cup coconut, 1/2 cup caster sugar, 100g melted butter, 1x 410 can apricots. Sift flour into bowl, stir in the coconut and sugar and melted butter.Press evenly into the base of a swiss roll tin and bake 180c for 12 mins or until lightly brown- cool. Drain and lightly mash apricots into a pulp and spread on base. Topping - 2 eggs, 1/3 cup caster sugar and 2 cups coconut, (I used shredded), combine the topping together and spread over the apricots, bake a further 25mins at 180c let cool before cutting

Sounds yum, I might try this tomorrow. Just lately I've been trying cake recipes on here... have made a stunning rich chocolate mudcake style cake, and also a hummingbird cake. Both were fabulous. I love apricot so will look forward to this one.
