You could make a thick white sauce, flavour it with some veg stock, add steamed veg and put into a pastry case.You could add curry pdr, soy sauce, tomato sauce etc for extra flavour.

25g butter
2 tbsp flour
1 1/2 cups milk
3/4 cup grated tasty cheese
2 tbsp oil
1/2 medium pumpkin, cut into chunks
3 leeks, cut into chunks
1 tub (250g) button mushrooms, chopped
1 cup dry white wine
300g baby potatoes, cooked
1 cup baby peas, defrosted
1 tbsp wholegrain mustard
Salt and freshly ground black pepper
2 sheets (350g) puff pastry
1 egg beaten

1. Heat oven to 220ºC. Melt butter, stir in flour. Gradually add milk and heat, stirring until thick. Add cheese, season and set aside.

2. Heat oil in pan, add pumpkin and fry untilgolden. Cover and cook for 5 minutes.

3. Add leeks and mushrooms and cook for 2 minutes. Add wine and boil off most of the liquid. Stir in potatoes, peas, cheese sauce and mustard. Season and heat through, then pour into an ovenproof dish.

4. Stick strips of pastry around edge of dish and put other sheet of pastry on top. Trim and crimp edges. Brush with egg and bake for 25 minutes until golden.
I make something similar to this but steam some broc & cauli, steam kumara instead of potato, I don`t add mushrooms, but a steamed carrot. So you culd basically add what you have on hand.
