Annabel Langbein's CORN AND FETA FRITTERS Base Batter: 1½ cups self-raising flour 3 eggs 1 tsp salt freshly ground pepper ¾ cup soda water
Flavour Ingredients: 2 cups corn kernels 2 tbsp chopped mint ½ cup crumbled feta cheese
Mix all the base ingredients until smooth.Stir in the flavour ingredients.Stand for 10 minutes.Cook spoonfuls in½cm hot oil in a pan over medium heat until golden on each side. Makes about 2 dozen.:-))
