Saw this one the other day...
Brown Sugar Buttercream

4 large egg whites
1 cup packed light-brown sugar
1/4 teaspoon salt
1 1/2 cups (3 sticks) unsalted butter, room temperature, cut into tablespoons

In a heatproof bowl, set over (not in) a pan of simmering water, whisk together egg whites, sugar and salt. Cook, whisking constantly until the sugar has dissolved and the mixture is warm to the touch.
Transfer to the clean bowl of an electric mixer. Beat on medium speed until fluffy and cooled, about 15 minutes.
Raise speed to high; beat until stiff peaks form. Reduce speed to medium-low; add butter, 2 to 3 tablespoons at a time, until fully incorporated.

Buttercream

250gms of unsalted butter should be as soft as possible without melting
500gms sifted icing sugar
1tsp vanilla extract

Beatthe butter until it is pale in colour.
Add around a third of the icing sugar to the butter on low speed.
Mix well. Add another third and then add the vanilla extract.
Finally add the remaining icing sugar.
Keep mixing until a uniform consistency is achieved.
Depending on the brand of butter and the temperature in your kitchen, you might need a couple of tablespoons of milk to loosen the buttercream.
Colour the buttercream using gel or paste colours rather than liquid colours.

This one is from the Hummingbird Bakery Cookbook.
250g sifted icing sugar, 80g unsalted butter, 25ml whole milk, 2 drops vanilla extract. Makes enough to frost 12 cupcakes.
Beat icing & butter together in electric mixer on med till mix comes together, turn mixer to slow, place milk and vanilla in a cup and mix together. Slowly add to butter mix. Turn mixer to fast speed and beat till frothy and whipped, at least 5 mins. The longer it is beaten, the fluffier it becomes.
Its lovely to work with, but remember its made from butter and will start to soften in the piping bag if you have warm hands.
