l made this recipe yesterday that was in last weekends Sunday Star Times and it is really nice but oh so rich so only small serves l cooked it for 35 minutes but it was a bit dry so if l make it again l will watch it more closely but still very nice as a special treat
Glenn's Flourless Chocolate Cake
300g dark chocolate, chopped 5 eggs 90g brown sugar 1/4 teaspoon cinnamon finely grated zest of 1 orange 2 tablespoons brandy 150ml creme fraiche, whipped to soft peaks (don't overbeat), then refrigerated cocoa and whipped cream, for serving
Preheat oven to 175C Line the bottom of a 23 cm non stick cake tin with baking paper Put the chocolate in a heat proof bowl and place it over a saucepan of barely simmering water so that the chocolate melts Stir so that it's smooth Take off the heat and reserve Put the eggs, sugar, cinnamon, zest and brandy in a stainless steel bowl and beat with a whisk over a saucepan of barely simmering water until the mixture is very thick, pale and creamy Take off the heat and pour into an electric mixer and beat with a whisk until cold, or do this with a whisk by hand Add the chocolate in a steady stream, whisking continuously Fold in the creme fraiche Pour into the cake tin, then place the tin in a large roasting pan and fill with enough hot water to come 3/4 of the way up the side of the cake tin Let the mixture settle for 10 minutes Place in the oven and cook for 30-40 minutes or until set Remove from the oven and take the cake tin out of the water bath Cool the cake completely Carefully turn out onto a serving plate Peel off the paper and dust with cocoa Serve in wedges with whipped cream
The creme fraiche gives it a pleasant tartness that cuts the richness slightly If there is any left over it is great the next day with coffee It is a true chocoholics cake which needs nothing with it except cream You can refrigerate the cake until needed, but if you do, take it out of the fridge for 15-20 minutes to warm up a little before serving

Yes it is and everyone loved it and with all that good dark chocolate in and no butter ;-) lt is nice when cold the next day with coffee
