Best use of leftover Roast Pork

Had a massive shoulder of pork over the weekend with heaps of leftover meat. Made a chinese style dish lest night with mushrooms and oyster sauce, but can anyone recommend another style of dish that would suit the rest of the leftovers? It's more like 'pulled pork' than slices (we cooked the roast slow and long) I was wondering about something like mexican??
