My mums recipes ~

sliced mushrooms
2 chopped onions
rump or veal steak
tin of tomatoe puree
1/4 C sherry
1/3 C sour cream
1/4 t paprika
beef stock

Brown the meat in a little butter. Remove and then brown the onions and mushrooms, replace meat, add salt and pepper then the tomato puree and sherry and beef stock (a cube will do it).
Simmer for 1/2 an hour to an hour. When ready to serve add the sour cream and then serve at once on a bed of rice.

As a kid I loved this despite it being quite rich :-)

Microwave beef stroganoff
1 onion, sliced
1 clove garlic, crushed
750g rump steak, sliced into ribbons
2 T tomato sauce
2 T worcestershire sauce
1 beef stock cube
1 t paprika
1/3 cup sour cream
200g mushrooms , sliced
Place all ingredients (except mushrooms and sour cream) in a 3 litre
casserole dish. Stir well. Cover and cook on medium-high ( power level 7) for 7-9 minutes, stirring once during cooking. Add mushrooms and stir. Cook on P7 again for 4-5 minutes. Stir in sour cream.
Notes - to make dairy free replace sour cream with a small tin of coconut cream
Often needs thickening at the end with cornflour paste, depending on how much liquid has come out of the mushrooms.
When I know dinner will be rushed , Iprepare the meat mixture during the afternoon, just cook the fettucine on the stove while this is in the microwave .

is also nice with wee meatballs instead of sliced steak if you are budgeting or have no steak.
