Stem Ginger

Anyone know where to buy this in Auckland - I will have to resort to making it if I can't find it.

New World often has it, but failing that try Asian grocery stores or specialty stores - sorry I can't recommend anywhere specific. The last lot I bought came from New World, though. :-)

What is stem ginger?

Its just ginger root, the usual stuff you find in any supermarket or veggie shop.

Stem ginger is just another of its names.

Oh I thought so, I was confused by your comment - that you'd have to make it :)

OP could actually be after preserved ginger (In Syrup) which can be called preserved stem ginger or even crystallized ginger which again due to regional name differences can be called candied stem ginger or crystallized stem ginger.

But as she just posted "stem Ginger" then that is just ginger root.

My understanding was that stem ginger is the commonly used name for the preserved ginger in syrup, which is made from the young root, whereas the whole ginger roots we get tend to be older and dried somewhat, giving a different texture. :-) I'm not an expert, and the terms are certainly confusing, but from reading plenty of recipes I think stem ginger is more usually referring to the preserved stuff.

Was tempted to keep the syrup for the Christmas Ham...mmmmm
