Which method would be better pickled pork.

I have done it before in a normal pot done corned beef way. now with slow cooker i am trying to decide if

Method 1: put it on a bed of potatoes and kumara with an inch of water combined with left over hangi juice(defrosted), with marinade on the pork and cooked on high to start off with and then turned to low

Method 2: just cover and put flavouring and cooked on low all day..

make up a mixture of honey and grained mustard, put the pickled pork on ali foil pour the mixture over - wrap up well and leave to marinate (prefer overnite)then put up turned saucer in crockpot place wrapped pork on top of saucer and add a little water up to top of saucer turn onto low and leave to cook about 6 hours - YUMMY

Marlin9 l do that but l just baste it with the mustard and honey wrap in tinfoil and then place in oven 150C and bake for 2hrs and it is always so nice

If i dont have enough time to marinade it overnight will it still be fine to do tommorow???
