dried chick peas cost bugger all, soak them the night before, and make loads of hummus, or vegetable curry with them

creamed tuna over rice, add onion, peas, green beans or mixed vege to the tuna.
browned mince with any veges with a gravy or cream sauce baked with a scone or potato topping.

These are old family cookie recipes that go down great with kids and are filling so economical.

Old Fashioned Molasses Drop Cookies350F degrees7 to 10 minutes
Makes about 42two inch cookies.
Use a greased sheet.

Blend together:
1/2 cup white sugar (not powdered)
½ cup shortening
1 egg
½ cup molasses

In a separate bowl, sift 2 ½ cups cake flour
Resift flour adding:
1 tsp cinnamon
1 tsp ginger powder
¼ tsp cloves
¼ tsp salt
1 Tbsp baking soda

Add to flour mixture:
½ cup chopped raisins
½ cup sour milk
[If you do not have sour cream, just add a splash of vinegar to the milk until it curdles (becomes chunky) and use this instead.]

Gently mix everything from both bowls together.
Drop by teaspoon onto a greased sheet.

Oatmeal Cookies325 degrees (no indication of cooking time)

Mix together:
3 ½ cups flour
2 tsp baking powder
2 tsp baking soda
3/4 tsp salt
2 ½ cups sugar – white or brown mixed.

Mix separately and add all at once:
4 eggs
1 cup shortening – oil or soft margarine (or butter)
¾ cup dark molasses
1 Tbsp vanilla

Mix and then add:
4 cups rolled oats (Quick oats),
1 ½ cups of any combination of raisins, dates or nuts that you want
(note from Margie:I sometimes add chocolate chips, chopped
dried apricots or cranberries as well.I usually add everything unless I am making it special for one person, who does not like something.You can be creative with what you add here.)
Bake on greased sheet or aluminum foil.
Don’t overcook or they’re hard.

Soft Chocolate Drop Cookies(this is a family favorite)
425 degrees(9 to 10 minutes until barely done)

Drop by teaspoon, 2 “ apart on a greased sheet.

Blend together:
3/4 cups of unsweetened cocoa powder (such as Hershey’s Cocoa)
5 ¼ cups flour
1 Tbsp baking powder
1 1/2 tsp salt
1½ tsp baking soda
2 cups shortening
1 Tbsp vanilla
4 cups brown sugar
3 eggs
1 ½ cup sour cream
[note from Margie: I suspect Mom used sour milk, rather than sour cream, because we never had sour cream in the house. To make sour milk, just add a splash of vinegar to the milk so that the milk curdles or is chunky.]

this is one of my fav's from there...

Ham, courgette and macaroni bake

Ingredients
2 1/2 cups macaroni pasta
2 courgettes
2 tablespoons reduced-fat spread
2 tablespoons plain flour
1 cup trim milk
1/2 cup light sour cream
2 cloves garlic, crushed
200g shaved ham, chopped
1/2 cup chopped fresh parsley
1/2 cup grated reduced-fat cheddar
Instructions
Step 1Preheat oven to 180°C. Cook pasta in boiling, salted water, following packet directions, until tender. Coarsely grate courgette and squeeze out any excess liquid.

Step 2Meanwhile, melt spread in a saucepan over medium heat. Stir in flour. Gradually stir in milk. Stir in cream and garlic.

Step 3Drain pasta and return to saucepan. Stir in courgette, ham, parsley and white sauce. Spoon into a 6-cup capacity ovenproof dish. Sprinkle with cheese. Bake for 30 minutes, or until golden.

Fish cakes are good and cheap.... flog some herbs from a neighbouring garden.hehe. Fish Pie - you can pick up Monk fish for dirt cheap and it cooks up fab in a pie. Bangers & Mash.Meat is the costly item - however mince can be cheap and you can do soo much with it.Bugers, nahco's, metaloaf, mince, lasgana, meatballs & spaghetti bolognaise, patties...if you get some cheap bacon you can make a cheap carbonara, a self crusting quiche is great for any leftovers in the fridge. Baked potatoes with baked beans, Veggie Soup...Good luck.

Quick tomato and sausage stew

Try using spicy chorizo or vegetarian sausages in this recipe to vary the flavour.

Ingredients
cooking oil spray
1 onion, sliced
2 cloves garlic, crushed
4-5 good quality sausages, sliced
400g can chopped tomatoes (flavoured if you prefer)
1 cup water
1 teaspoon ground cumin
1 teaspoon chilli flakes (optional)
425g can chickpeas, drained, rinsed
1 cup frozen peas, thawed
2 tablespoons chopped flat leaf parsley, to serve
Instructions
Step 1 Heat a wide pan over a medium-high heat. Spray with cooking oil. Add onion and garlic. Cook, stirring, for 3 minutes. Add sausages and cook for 5-6 minutes until browned.

Step 2 Add tomatoes, water, cumin and chilli (if using).Cook for 10-15 minutes until sausages are tender and cooked through.

Step 3 Stir in chickpeas and peas. Cook for a further 5 minutes or until heated through. Sprinkle with parsley to serve.

Meatloaf
500gm mince, a tube of sausage meat, 1 egg, 1 cup of breadcrumbs, 1 large onion finely chopped, 1tsp curry powder. Mix altogether and shape into a loaf, put into pan and spread a little tomato sauce on the top with the back of a spoon. Bake for an hour at 180. Should do a family of four, 2 adults and 2 kids for two nights. Mind you, my two teenagers could do it in one sitting on their own.
