I think this one is really good. It makes about 2 dozen standard sized men.
70 grms brown sugar, 70 grms white sugar, 2 teasp ginger, 2 teasp cinnamon, 1/4 teasp ground cloves, 200 grms treacle, 3/4 teasp baking soda, 150 grms butter, 1 egg, 500 grms flour.
Heat sugars, spices a treacle in a heavy-based pan and stir with wooden spoon until mxture comes to the boil. Add sifted soda and boil again stirring until mixture is pale and frothy. Removed from the heat and pour onto the butter in a mixing bowl - stir until butter melts. Add lightly beaten egg and sifted flour. Beld thoroughly to make a soft dough. Turn onto floured board and knead lightly until smooth. Halve and shape into two rectangles. Wrapped in waxed paper and chill for 10 mins. Roll to 5mm and cut out shapes. Mixture will not become tough if re-roll scraps several times. Bake at 160 degrees C for 15-20 mins rotating trays after 10 mins. Should be firm to the touch and just starting to brown.
