Made from fresh peeled apples? Try dipping the apples in salted water first. The way to keep sliced or grated apples fresh is to cover and coat with lemon juice, not sure if this would work once juiced, but could be worth a try. Another suggestion could be to add pineapple juice to the mix as pineapple juice stops fruit discolouring as well.

yum I will try that, love pineapple juice. I don't peel the apples just chuck them in whole.
