you take it out of the soft teflon pan? It broke in half last time when it was still quite warm. I put the cake rack on top and turned it over, but about a quarter of the cake got stuck. Should I perhaps let it go cold first?

Yes make sure it is cold just like if you were to do it in a tin.

I'd say it has to be cool before turning out - best not to leave it to go cold - the rack is supposed to help it cool down evenly.
What do you think of the floppy cake tins? Am I the only one who thinks they're rubbish?
