Rice Pudding

ihave some left over cooked rice from last night. Is there any way I can use it to make a nice rice pudding.Thanks

dont see why not, i would guess it wont soak up the liquid the same as it already has but if you make the mix like you do for eggy bread......then it should set

An old fashioned rice custard used cooked rice. Add eggs, milk and sugar. Bake at a low temperature or in a water bath. I do mine in the microwave at 30% power in bursts of 5 mins or so. You should end up with a layer of rice topped by set egg custard. I would think you could stir frequently as well but I never have. They used to be topped with sprinkled nutmeg.

Beat a couple of eggs and milk, a bit of sugar. Stir through some sultanas, pour milk/egg mix on and bake slowly in a water bath. I definitely like mine with nutmeg on top. And served with cream. mmmmm

Too bad the kids dont like it much - means I have to eat the whole thing.
