I'd use like chicken mince & make the patties. There is a pie recipe that Jamie Oliver made with turkey so guess you could use the mince in place of meat.

Here tis
I saw Jamie Oliver do a delicious looking turkey pie. Basically saute leeks and bacon, add stock and cream, throw in left over turkey, plenty of black pepper, sieve as very saucy, put filling in pie dish with pastry over the top and use the sieved sauce as gravy.

I cooked quite a bit with Turkey mince a couple of years ago when looking after my sister - it was the main meat in her freezer!- I used it instead of minced pork in recipes - the following one worked well:

Pork and Caraway Pilaf
Ingredients
• 2 tablespoons oil (if the pork is reasonably fatty then I leave this out)
• 400-500 grams pork mince
• 1 large onion, diced
• 2 cloves garlic – finely chopped
• ¼ to ½ cabbage – chopped (if you have more pork use less cabbage and vice versa, or, leave it out.)
• 1 heaped tablespoon caraway seeds
• 1½ cups basmati rice
• 3 cups liquid chicken stock (I used Campbell’s)
• pinch of white pepper or a bit of ground black pepper (optional)
• finely chopped parsley (optional)
Method
1. Heat the oil (if using) in a large frying pan over medium-high heat.
2. Cook the pork mince until browned and remove from the pan.
3. Add the onion and the garlic to the pan and cook 3-5 minutes or until the onion has softened.
4. Add the caraway seeds and rice and cook for 2 minutes or until the rice is glossy and the mixture is fragrant.
5. Add the chopped cabbage and cook a further minute or two until the cabbage starts to wilt a little.
6. Add back the pork, pour in the stock and bring to the boil.
7. Next, reduce the heat to a low simmer.
8. Cover (I just use some tinfoil) and cook for 15-20 minutes or until the rice is cooked.
9. Take off the heat, stir, and leave covered to rest for 5-10 minutes.
10. Season to taste (it may not need much salt if the stock was salty).
11. Stir through the parsley if using and serve.
