Looks delicious. I have a mental block when it comes to baking with oil. Will freeze ok but can you not ice once defrosted? Tinfoil, gladwrap or air tight container will be fine for freezing. When are you planning on baking it?

I have 2 eggs left over and DH really wants chocolate cake tonight - I thought I might bake him a quick cake and freeze the rest. We are going away for 3 days and the eggs only have 2 days left on them.

Yes you can freeze, and you can easily freeze it in a tupperware (or similar) plastic container. Make sure when you defrost it that you leave it in the container to defrost.

I buy a tray from the supermarket - usually enough for 2 month

If you are not sure about eggs put them in a bowl of cold water,If they float toss them.If they stay submerged (although they may come off the bottom) you can use them
