Leek and Potao soup anyone got a good recipe?

LEEK & POTATO SOUP

Clean one large or 2 small leeks, slice leek thinly and grate 1 clove of garlic

Melt 2 Tablespoons butter OR oil on low heat and add leeks & garlic

'Sweat' on low heat for 10 minutes, making sure they don't brown

Peel 2 medium to large potatoes and cut into small dice-sized cubes

Add potatoes to pot with 4 cups water & 1 'Massell' vege stock cube, 1/2 teaspoon salt & a good grind of pepper
For extra 'zing' add 1/4 teaspoon cayenne pepper

Bring to boil, turn down heat and cook 15 -17 minutes and when soft, mash down just a little

Add a little milk to thin it and serve with a sprinkling of chopped chives for garnish

Note:'Massell' is an Australian brand with NO preservative/artificial flavour/colouring etc - useful for when you don't have your own vege stock
