Whey recipes?

I made some ricotta and am left with a lot of whey - what can I do with it?

Easy ricotta: Heat 2L of milk to 85-90 degrees celsius, add 1/3 cup lemon juice (or vinegar), salt, fresh herbs or garlic (optional), and leave to cool down. Strain in a cheesecloth/muslin lined colonder overnight.

So this makes lovely ricotta but I'm left with the whey. Can I make scalloped potatoes or something with whey instead of milk?

I just drink it well chilled.

I did the scallop potatoes any and it was delicssshhhh.

Thinly sliced agria, red onion, sage and cheese, layered in a casserole, pour over a cup of whey, bake for 45min.

Isnt that paneer not ricotta? Or are they made the same way?

Or just curds flavoured with herbs. Nice to eat like ricotta and I use it to make ricotta & spinach stuffed cannelloni.

Usually I put the whey on the garden, but I'm glad I've found a use for some of it.

Anyway with whey i use it for cooking rice or pasta and instead of water in soups. it is great for making bread too. Can add into curries too.
