Old Recipe for Cheese crackers/straws

charliewigs, Apr 16, 11:28pm
Does anyone have a recipe for cheese crackers?A lady who used to babysit us made them for us when I was a child they were delicious, as all things were when you were a child! She would be in her 90's now and was always secretive with her recipes - hence I never manage to get it!I think it had an onion soup in it but it they weren't spicy just very very cheesey light and crisp she rolled them out and cut them into squares.I think they had a fair amount of butter in them as they used to disolve in your mouth.I'm sure my kids would love them if I could find a blimin' recipe!Any help much appreciated.

CHEESE STRAWS

Ingredients

Sift together 1 ½ Cups of Self-raising Flour
½ tsp Baking Powder
¼ tsp Salt
Pinch of Smoked Paprika

In a jug warm 3 Tbsp of milk and whisk one egg into the milk well.
Cut in & rub 75g Butter and 1 Cup of grated cheese into the dry ingredients
Bit by bit add the milk mixture working into a dough that is soft to the touch but not sticky
Roll out to 5 mm thickness and cut out thick sticks
Place on a cooking tray and add extra grated cheese on the top of each straw.
Bake at 180°C - 190°C for 10-15 minutes until nicely risen & golden

1C plain flour
60g butter
90g cheddar cheese
pinch cayenne pepper
1/4t salt
1 egg yolk
1T lemon juice

Rub butter into sifted flour until mixture resembles fine breadcrumbs.
Add grated cheese, cayenne and salt, mix lightly.
Combine egg yolk and lemon juice.
Make well in centre of dry ingredients, add egg yolk mixture, mix to a firm dough.
Roll pastry out thinly, cut into strips 1cm x 8cm.
Bake on greased oven trays in moderate oven for 12 minutes. (190-200deg C)
Makes approx 100 straws.

I've only made these once, as I don't like cheese, but am sure they were light and buttery. (it's been probably 20 years since I made them and sometimes think about making them again, but can't face having to eat any - sorry hubby).

Taken from the AWW new cookbook (back in the year lol).

Edmonds one and the one I use:
1cup flour
1Tbs icing sugar
1tsp baking powder
pinch salt
pinch cayenne pepper
2Tbsp butter (I use a bit more)
75g grated cheese (I use closer to 100g)
Method:
Sift dry ingredients, rub butter in until like breadcrumbs, (quicker to do in food processor).
Stir through cheese and mix to a stiff dough with a little milk.
Knead and roll out very thin, cut into fingers or squares and bake 10mins @ 200C.
