RED PEPPER SAUCE

16-20 red peppere
2 cups white wine vinegar
2 cups cider vinegar
6 cups sugar
1 teaspoon salt

Seed and roughly chop peppers
Bring to boil and simmer for 15 minutes in the vinegars
Once cooked, puree(I whizzed in food processor)
Return to the washed pot and add sugar and salt
Slowly dissolve sugar and bring to the boil. Simmer 15 - 20 minutes
Bottle into sterilised jars.

I was given this recipe last week and the red peppers were $7.99 a kg at Funky Pumpkin (cheapest I could find).Just back from New World and they have them on special at something like $2.99 /kg!!!Lol.
