Pickled cucumber

I am finding I am throwing out the odd 1/2 cucumber lately.
We have been buying two telegraph cucumbers for less than $2.00. I have decided to make a fridge pickled cucumber.
Two sliced cucumbers
sprinkle 2 tsp of sea salt over, stir and leave to sweat. stir every now and then for 2 hours, drain, rinse and dry a little with a paper towel.
bring to the boil
1 cup of wine vinegar
1/2 a cup of sugar
1/2 tsp each;
mustard seeds
turmeric
whole black pepper corns
Pour over cucumber while hot.
Keep in the fridge, like you do, beetroot. I have mine in a container just like my beetroot.

Hi Pickles.. I use a similar recipe and bottle it using Perfit seals.. pop a jar in the fridge - or keep one there - so you can serve it chilled..

I have just made another lot up, used cider vinegar this time.
....juliewn.... did you find the cucumber was crisper done like that. Mine are as crisp as biting into an apple straight off the tree. nice, very nice. May look at sealing some next season.

Isn't it funny how all the first lot of cucumber got eaten, Not by me, my Husband , yep he is the one. Not having to look for a cucumber, get the board , find the nice red knife, slice what he needs, clean the board rinse the knife. lol.
