Do you peel it before you grate or not?I've always done so but several American sites I've been looking at don't bother.I've got 1.5kgs of it to grate & freeze.

I throw in freezer as is. Then when needed I take it out and using a sharp knife, I hold it one hand and run a sharp knife down the side )fast) I want to use. It comes off like its grated, very fine straight into my cooking! Saves grating it:)
