Ginger Crunch

Hi, anyone out there with a really nice Ginger Crunch recepie, am hanging out. :-)

125 g butter, 125g sugar, 200g flour, 1tsp ground ginger, 1 tsp baking powder. Cream butter and sugar add sifted dry ingedients, knead and press into a shallow tin bake 20-25 mins at 190. In a pot 2 tablespoons butter, 4 of icing sugar, 2 tsp golden syrup and 1 tsp ground ginger. Heat until melted and pour over base while hot, cut before cold. If you want more topping just double the recipe.

also have an unbaked one, 1/2 cup brown sugar, 125g butter, 1/2 can condensed milk, 2 tbls golden syrup, 1 packet ginger nuts roughly broken, 1 1/2 cups walnuts, 1/2 cup coconut, line tin with waxed/cooking paper. Melt together butter, sugar condensed milk, bring to the boil and boil for 5 mins stir occassionally, combine all dry ingredients mix with the caramel and press into tin. regridgerate and ice when set, just a normal icing with some ground ginger or a little lemon is nice.
