Mint Jelly:1 c malt vinegar, 1 c water, 2 T sugar, 4 t gelatine, 1 c finely chopped mint.Bring vinegar, water and sugar to boil, stirring until sugar dissolved.Boil a few mins.Sprinkle gelatine over a little cold water (extra), stand a few mins until softened, then stir into vinegar mix until it is dissolved.Add the mint.Remove from heat and allow to cool but not set.Spoon into small clean jars and cover.Not sure how long it keeps, it gets used pretty quickly and is easy to make regularly.

Here's the one I made for Christmas Day - it made 2 jars and I'm using the second one now - just as nice as when first made.(I keep it in the fridge.)
Mint Jelly
1 cup white vinegar
1 cup chopped mint
1 cup boiling water
1 pkt lime jelly
Dissolve all together, stir continually until nearly set. Keep in fridge with lid on it.

I didn't stir it continually - just every now and then and then left it to set.
