Hi. . individial apple tarts/pies is lovely using filo pastry. . or use other fruits too - apricots, nectarines, etc. .

While most filo recipes say to brush melted butter between each sheet of pastry, I don't do this. I layer 2 sheets of pastry, then diagonally in one corner, place thinly sliced apples (skin on or off) in an oblong about 10cm wide x 6cm, sprinkle with brown or white sugar if you want, and some cinnamon or mixed spice.

Fold over the corner of the pastry, then the sides, then carefully fold the apple part over and over, to form a neatly shaped oblong package. Place onto a baking paper lined oven tray.

Cut little sliced holes in the top, brush with milk or melted butter, and if you want, sprinkle with a little sugar - it will caramelise while baking.

Bake as per the filo packet directions... and enjoy. .
